Walther PPK
James Bond (Roger Moore) primarily uses his Walther PPK. Also carried by Emil Locque (Michael Gothard) on the beach before Bond kicks it out of his hand.
SA vz. 58
A guard at Hector Gonzales' house carries the SA vz. 58.
Smith & Wesson Model 39
Henchmen working for Gonzales, Columbo, and Kristatos all carry Smith & Wesson Model 39 pistols.
Smith & Wesson Model 19
One of Gonzeles' henchmen chasing down Bond and Melina carries a .357 Magnum Smith & Wesson Model 19.
Barnett Commando Crossbow
Melina (Carole Bouquet) uses the Barnett Commando Crossbow as her primary weapon.
Custom built bolt-action rifle
The East German hitman Erich Kriegler (John Wyman) uses the Custom Bolt-Action Rifle from the previous James Bond film The Man with the Golden Gun during the Olympic ski match. The barrel gets bent after he crashes in the snow, angrilly throwing this rifle at Bond.
Beretta M951
Several of Kristatos' thugs in Cortina fire Beretta M951 pistols at Bond.
Prop Indicator Guns
Mounted on the Yamaha XT500 motorbikes during the snow chase. These are probably propane gas firing as they dont eject brass. Screenshots.

Some of Locque's warehouse guards carry and fire French MAT-49 SMGs. The gun is also used by Gonzales henchmen in Spain.

One of Locque's warehouse guards is carrying a German MP40 SMG.
