A type of M1911A1 is seen in the gunstore
Smith & Wesson 659
A Smith & Wesson 659 with Pachmayr grips and non-adjustable sights can be seen on the gun store counter.
Smith & Wesson Model 60
The gun shop owner (Jeff Anderson) hands Loki (Matt Damon) what appears to be a Smith & Wesson Model 60. He describes it as "The Fecalator - one look and the target shits him- or herself." Loki weighs it in his hand, remarking that it is "a lot more compact than the flaming sword" that he wielded as the Angel Of Death, "but not nearly as impressive."
Submachine Guns
MAC-11
An Ingram MAC-11 is used by Azrael (Jason Lee), picked up by Rufus, and then used by Jay.
Rufus (Chris Rock) grabs the dropped Mac-11.
Thompson
What appears to be a Thompson variant with a foregrip can be seen on the gun store rack, and what appears to be a second one sans foregrip can also be spotted on the right.

Two M14s are seen at the gun store. One has wood furniture while the other has synthetic.
