Ramos Revolver
From what I can see of it it looks like a S&W Model 27 or 28 with a 4" bbl. He has 2 dump pouches carried on his weak side.
Ramos' revolver is either a Smith and Wesson M27 or M28 .357 Magnum with a four inch barrel and the full "football" wooden grips. I'm leaning towards the M28 (also known as the Highway Patrolman)since it was standard issue for the Texas Department of Public Safety, which Ramos was a trooper in. Also Dakota has one he uses to threaten Snow during the card game at his home. The one Dakota uses has a set of Pachmayr grips.

Pilots Revolver
From the cap it appears to be a colt revolver possibly a N.S. .38 I'm going by the medallions on the grip and the shape of the grip.
Towed Artillery Piece
It is looking less like standard artillery and more like a recoilless rifle. 90 to 105 mm on a towed mount. The nearest towed piece I've found is the Model 1968, from Argentina. However that is just because it is the only towed one I've found with a similar profile. There are several US recoilless rifles that also look similar but I can't locate the mount. Barnett Commando Crossbow
Jackson also carries a crossbow for the assault on Rawley's compound.
McQuade's Gun Rack
Far left rifle looks like a .22 pump, I can't see the receiver well enough but the tube mag is too small to be a larger caliber, next over to the right looks a lot like a Trapdoor Springfield or an unconverted Springfield musket, The third from left looks like a Remington forend and I think I see a tube mag but I can't be sure, the gun on the far right has a Remington 870 Shell lifter.
Dakota's Gun Rack
Far and second from left both appear to be S/S Double barrel shotguns, far left might be a 12 ga, second from left looks like it might be 16 or 18 gauge, third from left is I think a Savage Lever Action or a Marlin Lever Action, 4th from left looks like a single shot 12 ga top break and far right is a bolt action of some type I can't be more sure that that because the sling is in the way
