Marcus Burnett (Martin Lawrence) uses a Smith & Wesson 4506 as his sidearm throughout the film. It changes during the movie to different versions of itself with different sights and frames.

Although Mike Lowrey normally carries a chrome-plated (not nickel. watch the documentary/making of) SIG-Sauer P226, the gun he uses to shoot Fouchet is clearly a smaller SIG P225 which also has a chrome finish (note the shorter barrel and different trigger guard shape, plus the thinner frame). It is not clear whether this is supposed to be a backup weapon, or merely a continuity error.
One of Fouchet's (Tchéky Karyo) cronies, Ferguson (Vic Manni) uses a LAR Grizzly Win Mag, a variant of the M1911A1 chambered in .45 Winchester Magnum with a barrel protruding past the slide. It is most notably seen after he kills Eddie Dominguez (Emmanuel Xuereb).
One of the men that breaks into Julie Mott's (Téa Leoni) apartment while she and Marcus Burnett (Martin Lawrence) are trying to escape can be seen using a SPAS 12 shotgun.
When Julie Mott (Téa Leoni) goes to Club Hell, she grabs a stainless steel Walther PPK/S from Mike Lowrey's (Will Smith) cabinet with intentions of killing Fouchet (Tchéky Karyo) there. But when this results in shootout at the club, Mike takes the gun and uses it as his back up weapon.
A gangster uses a silver finished Winchester 1300 when firing at the Ether truck. Mike Lowrey (Will Smith) later grabs one off a dead gangster and uses it in the final firefight.
(I think you mean one of the cops that were with Lowery & Burnett, because they came in the garbage truck dressed in white. Am I wrong?)
(No, you aren't wrong, I just watched the movie and it was one of the other Detectives that was helping Lowery & Burnett, Detective Sanchez)
Special
Error creating thumbnail: File missingIn the DVD extras, the on set armorer shows off a Calico M955A which is similar but not identical to the model used in the film.
Funny. In the movie still, the actor has a Calico 960A SMG, but the shot of the armorer has him holding a Calico 955A, note the longer 'intermediate' length barrel, the forearm. Both are select fire guns, but one is pistol length barrel, the other is an intermediate length barrel.
Desert Eagle Mark XIX
After the highway chase and Club Hell scene, Julie (Téa Leoni), Mike (Will Smith)
and Marcus (Martin Lawrence) go to a store. When the store clerk (Shaun Toub) notices Mike's gun in his holster, he pulls out one of two Desert Eagles he has behind the counter on the two detectives. When the clerk gets distracted by Julie walking out of the store, Mike and Marcus pull their guns on the clerk and some humorous dialogue ensues.
When Marcus Burnett (Martin Lawrence) goes back to his house, two gang members looking for Julie Mott (Téa Leoni) are in a nearby car, but before they can do anything, Detective Sanchez (Nestor Serrano) armed with a Smith & Wesson 659 and Captain C. Howard (Joe Pantoliano) arrest the two men.
Near the end of the film, a wounded Fouchet pulls a hidden COP 357 Derringer in a last-ditch attempt to kill his captors, though is foiled when Lowrey spots the light reflecting off the pistol's chrome plating and shoots Fouchet before he can use the weapon.
