The following guns were used in the movie Shanghai Noon.

This movie took place maybe 1886 judging that the sequel took pace in 1887.

Colt Single Action Army

Owen Wilson as Roy O'Bannon uses a pair of these for the majority of the movie until they are taken by Marshal Nathan Van Cleef (Xander Berkeley). Roy's SAAs had pearl grips. Roy gets them back at the end of the movie. Also when Roy won the final gun battle, the 2 guns he was using to shoot were replaced with 2 identical SAAs.

Smith & Wesson Schofield

After Roy's Single Action Army pistols are taken by Marshal Van Cleef he can be seen using some model of break top revolvers, possibly early Smith & Wesson models.

looked like a Schofield, but with a black finish.

Remington 1858 New Army

Wallace (Walton Goggins) in Roy's previous gang had this on him.

12 Gauge Double Barreled Shotgun

In the scene were the bar fight is broken up, the local sheriff is seen firing this gun into the ceiling. One of Roy's goons before they turned on him had this shotgun but sawed off, the fat guy. "John's" Native American wife Falling Leaves (Brandon Merrill) also used one to spook cattle to break open a jail he and Roy were in.

Henry 1860

Chong Wang's (Jackie Chan) wife Falling Leaves (Brandon Merrill) can be seen using this rifle (as identified by the way she loads it by rotating the end of the gun to expose the tubular magazine) during the rescue of Chong and Roy at the Gallows.

Remington Rolling Block Cavalary

Seen a little after the beginning of the film, when the man who brought Princess Pei Pei (Lucy Liu) to America, threatened her to his employer for more money. It appears to be a single round weapon and resembles a Remington Rolling Block Cavalary. Anyone else have thoughts?
