A Mauser C96 can be seen being used in the gunfight at the climax of the film.

Another guard in the Grand Budapest Hotel is seen with a PPSh-41. This gun is anachronistic, as this part of the film takes place in 1932 and the PPSh-41 wasn't made until 1935.
