I used to own the 'Elite Edition' of this game (the disk got scratched unfortunately), and I'm certain that the player could use the AK (with a similar array of add-ons to the M4) and a number of other weapons not mentioned here (including an HK P7M13 and more than one Glock variant) during custom missions and co-op.  Sorry I'm no longer in a position to provide screen-shots, maybe I'll be able to borrow a friends copy if he still has it.
