The following guns were used in the movie The Matador
Accuracy International AW
Julian Noble (Pierce Brosnan) uses several different Accuracy International Arctic Warfare sniper rifles during his hits.
Smith & Wesson Model 36
Julian shows Danny (Greg Kinnear) and Bean (Hope Davis) a Smith & Wesson Model 36 that he keeps in an ankle holster, which Bean correctly identifies as a .38. -I think this is a third generation model of a Colt Detective. The full barrel shroud shows that it isn't a S&W Model 36.
Smith & Wesson 4506
Julian is seen with a Smith & Wesson 4506 with the squared trigger guard (which oddly has double stack buldges but is single stack) semi-auto while in Mexico. The pistol turns out to be a BB gun for an arcade game (despite its realistic appearance).
