John Steele (Martin Kove) uses a Colt M1911A1 at several points in the film. A Vietnamese gangster can be seen with one as well.
Heckler & Koch HKP7M8
Pham Van Kwan (Peter Kwong) uses a Heckler & Koch P7M8 to intimidate a Vietnamese neighborhood. One is also seen in a US Army armory.

A Ruger Blackhawk is seen in the car trunk of a Vietnamese hitman.

During an undercover bust Det. Tom Reese (Bernie Casey) carries a Smith & Wesson Model 10. A Vietnamese mob hitman can brief be seen with one before being shot.

After the undercover bust Det. Tom Reese (Bernie Casey) switches to Smith & Wesson Model 12. John Steele (Martin Kove) holds up Det. Reese with it after his jailbreak.

During his job as a rancher John Steele (Martin Kove) uses a Mossberg 500 to scare the cattle off the range. One is also seen in a patrol car John steals.
Mossberg 500 Bullpup
During an operation back in Vietnam John Steele (Martin Kove) uses a Mossberg 500 Bullpup with a reflex sight and a launching bayonet which Gen. Bon Soong Kwan (Soon-Tek Oh) later takes. The weapon is anachronistic for the Vietnam War as it was not made until 1985.
Mossberg 590
One of John's squadmates in Vietnam carries a Mossberg 590. John himself later uses it to threaten some Vietnamese mobsters and said mobsters use them during a drug deal. It is anachronistic to Vietnam as it was not made until 1987. On that note this is the earliest appearance of a Mossberg 590.
Remington 870
One of John's squadmates has a Remington 870.
Sub Machine Guns
Beretta PM12S
Lee's (Robert Kim) main weapon during Vietnam was a Beretta PM12S.
Heckler & Koch HK94A3
A Vietnamese hit squad attempt to kill John, his ex wife Tracy (Sela Ward), and Lee's daughter with Heckler & Koch HK94A3s with slimeline handguards. John menages to grab on and use it.
MAC-10
Multiple Vietnamese mobster carry MAC-10s both with and without silencers.
Madsen M50
A few Madsen M50s are seen in the armory. Presumably standing in for the similar looking Smith & Wesson M76.
Sterling Mk. IV
John Steele grabs a Sterling Mk. IV from (oddly enough) a US Military Armory he broke into.

Pham Van Kwan (Peter Kwong) uses a Steyr AUG when John ambushes a drug deal.
LaFrance Specialties M16K
Most soldiers in Kwan's squad have what appear to be LaFrance Specialties M16Ks.
M16
Actual M16 Rifles are used during Lee's funeral but cannot be truly IDed due to no shot of the right side of the receiver.
MGC M-16 Model Gun Corp Replica Rifle
While the right side of the receiver is never seen to confirm this all the M16 rifles that do not fire in the film can be assumed to be MGC M-16 Model Gun Corp Replica Rifles.
Norinco Type 56
While never seen directly the Viet Cong are most likely using Norinco Type 56s.
XM177
A mockup of a XM177 is seen in the armory.

GE M134
When John ambushes a drug deal he does it with the help of a GE M134 mounted onto an Armored Car.
M60
A member of John's Squad has an M60.
Browning AN/M2
When John ambushes the drug deal two Mafia goons attempt to use a Browning AN/M2 to stop the armored car he's riding in on.
Valmet M78
A Mafia thug has a Valmet M78 during the drug deal.
Launchers
Hawk MM1
John grabs an Hawk MM1 grenade launcher with an extended barrel from an Army base and later uses it against Kwan.
RPG-7
A mocked up RPG-7 is used by Harry (Joseph Campanella). This appears to be the same fake RPG-7 used in Rambo: First Blood Part II.
Explosives
M26 Hand Grenade
Kwan uses M26 Hand Grenades throughout the film.
