MP 40 Submachine Gun
Both the German Army and the French Resistance use the MP40 throughout the movie. Labiche (Burt Lancaster) uses it during a nightime raid.
Mauser 98k Rifle
It appears that both the German Army and the French resistance use the Mauser 98K Rifle throughout the movie.
