The weapons seen in this movie are:
Browning HiPower 9mm
Rico's weapon of choice. At the beginning of the movie, he uses a chromed HiPower to execute someone at his drug plant. He later carries it with him in the Australian outback while pursuing Mick and Sue. Rico's HP was earlier identified as a .40, but Crocodile Dundee II was released in 1988 and the .40 S&W did not hit the market until 1990, making it a 9mm by default.
Ruger Mini-14

Used by one of Rico's men in Colombia.
Lee Enfield
Mick's rifle by choice. Customized with a thumbhole stock.
S&W 29
Remington 870 Shotgun
Used by the hitman that blows a hole in Mick's door. I think it is a pistol gripped Ithaca 37.
Confirmed. It was an Ithaca.
Winchester Model 1894
A lever-action rifle used by one of Frank's men while pursuing Mick and Sue.
Pattern 14 Enfield
A sporterized Enfield is used by one of Rico's henchmen while pursuing Mick and Sue. Sue later uses it to shoot Rico's #2. Being in Australia, we can assume it is a Pattern 14 rather than the US 1917 Enfield.
