The following weapons were used in the film Le Professionnel (The Professional):
Armalite AR-10 Assault Rifle
The Armalite AR-10 is used to great effect by Joss Beaumont (Jean-Paul Belmondo) during the firefight in the african village. Obviously he likes to be prepared, since he must've stashed the disassembled rifle in a "goodie-box" in one of the huts before his arrest.
Browning M1919
The Browning M1919 is seen mounted on a Jeep during the assault on the village.
Browning M1917 (?)
Seen briefly in the background during Joss' fight with the prison-guards.
MAT-49
Most of the african soldiers use the french MAT-49 SMG during the raid on the village.
High Standard FLITE KING K-1200 Riot
The black prisoner (Sidiki Bakaba) gets this one off a guard he kills. He then (rather foolishly) opens fire with it on the approaching soldiers during the raid and is promptly shot.
NOTE: I'm not an expert on shotguns, so please correct me if it's not the K-1200 ..:)
Unknown Flamethrower
Used by the african soldiers to incinerate some of the huts in the village.
Colt Python
Back in France, Beaumont uses a Colt Python revolver with a 6in barrel as his main sidearm.

Unknown automatic handguns
Beaumont's lover Alice Ancelin (Cyrielle Clair) keeps a small automatic in her nightstand.
When talking to Beaumont during the film's climax, the president tries to grab an unknown handgun from his desk's drawer. The gun is never fully seen, because Beaumont realizes what's going on an slams the drawer shut.
Scoped assault rifle, probably SIG Manurhin SG-540
During the memorable last minutes of the film, two of Beaumont's ex-colleagues use a scoped assault rifle with a folding stock and an unusually large magazine. After some poking around on the internet, I *think* it's a SIG Manurhin SG-540 (license-built SIG SG 540 in 5.56mm), but I'm not quite sure. Again: Please correct me if I'm wrong.
