The following weapons were used in the movie Pan's Labyrinth
The Spanish title of the film is El Laberinto del Fauno.
Mauser rifle
Spanish soldiers as well as Maquis carry what appear to be Mauser-pattern rifles. Not sure what the exact model is.
They should be Mauser Oviedo 1916, the official rifle of Guardia Civil for many years
Double Barreled Shotgun
A handful of Spanish Maquis can be seen wielding double barreled shotguns.
Sten
Several Sten guns can be seen on the hill lying among dead Maquis Captain Vidal and his forces assault during the movie.
Luger P08
Captain Vidal carries a Luger P08 as his main sidearm.
Astra 600
One of Vidal's officers is seen with an Astra. Makes sense, since the movie is set in Spain & Astra's are Spanish pistols.
FN Model 1922
Several of Vidal's officers can be seen using FN Model 1922's
FN Model 1903

Trivia
None of the guns in this film are ever actually fired. At the time of production, a drought was taking place, and the production team was not allowed to use blanks or even squibs. Hence, all those effects are digital. However, since Hellboy, it seems they have remembered to include actions cycling, which is also done digitally.
