This is not a Winchester M1897 as there hammer is not exposed, it is more than likely a Model 12
this gun could also be a Savage model 620, Stevens 620, or wards model 60, however none of these guns would have been used in the European theater. They were all used through out the war however in the pacific theater along side the Winchester model 1897.

The following weapons were used in the film Saints and Soldiers:
The M1 Garand is used by Cpl. Nathan 'Deacon' Greer (Corbin Allred) in the flashback and in the second half of the movie. Also used by Medic Steven Gould (Alexander Polinsky) and by SSgt. Gordon Gunderson (Peter Holden). The majority of the US soldiers also carry the M1.
M1 Carbine
The M1 Carbine is used by the British pilot Flt. Sgt. Oberon Winley (Kirby Heyborne) and some US troops at the end.

Karabiner 98K
The Karabiner 98k is used by the majority of Wehrmacht soldiers. 'Deacon' gets a hold of one in the beginning and uses it through the first half of the movie giving it to Kendrick in the second half
Scoped Karabiner 98K
During the climax, a German sniper shoots Deacon three times with his scoped Karabiner 98K.
