The Beretta 92F is used throughout the series, notably by MacGyver in Season 2's "D.O.A.", when his amnesia prevents him from remembering that he detests handling guns.

Beretta 92FS - 9x19mm. This well worn movie gun is the original Beretta 92F that Bruce Willis used in Die Hard and was also used by Mel Gibson in the Lethal Weapon series. This is the hero screen used live firing gun in both films and has since been 'retired' to a glass museum case. Note the extended slide catch.

Chinese soldiers as well as MacGyver are seen using the Valmet M71S rifles in place of the AK rifle in the pilot episode.
