Master Gunnery Sgt. Thomas Beckett (Tom Berenger) uses a sporterized Mauser Model 98, as evidenced by the flag style safety (unique to Mausers) and butter-knife bolt-handle.
Steyr SPP
The bodyguards carry Steyr SPP machine pistols.

Incorrectly indetified by Thomas Beckett as a "Mauser 7.92" in the movie. It is a full size 7.62X54R Mosin Nagant M91/30
Heckler & Koch MP5
The men who hunt Beckett and Cole (Bokeem Woodbine) carry the Heckler & Koch MP5. Cole is also seen carrying one in the forest.

Cole carries an AK47 near the end of the film.
