MP40
One of the guns seen in the film very often, most notably used by German officers and NCO's:
PPSh-41 Submachine Gun
The PPSh-41 is beyond debate the weapon seen most often, as it is used by Soviet soldiers as well as by German soldiers.
Karabiner 98k
The Kar98k is seen used by Germans occasionally.
Mosin Nagant M91/30 Sniper Rifle
The M91/30 is only seen briefly in the entire movie.
