M1 Garand

M1 Garands were seen slung over the shoulders of the Basterds when first assembled. They were also seen in the movie within the movie, Nation's Pride.

Mauser Karabiner 98k

Karabiner 98ks were seen used by German soldiers and the Basterds. Fredrick Zoller (Daniel Brühl) uses one when playing himself in Nation's Pride and can be seen holding it on the poster. The film-within-a-film "Nation's Pride", presumably made as Nazi propaganda, appears to have been edited to make Zoller's Karabiner 98k appear to fire semi-automatic shots rather than bolt-action.

MP40

Germans and Basterds, such as S/Sgt. Donny Donowitz (Eli Roth), Hugo Stiglitz (Til Schweiger), and PFC Omar Ulmer (Omar Doom), were using MP40s throughout the entire movie. Wilhelm (Alexander Fehling), a German soldier, uses an MP40 during the "Mexican standoff" with Aldo.

MG42

The MG42 was seen held by Hugo Stiglitz (Til Schweiger). In the first trailer, we see one of the Basterds running down a hallway, firing an MG42, but it was never seen in the final cut.

Walther PPK

British Lt. Archie Hicox (Michael Fassbender), disguised as an SS Captain, points his Walther PPK at Major Hellstrom of the Gestapo. Hugo Stiglitz (Til Schweiger) also holds a PPK on him until he shoots him in the testicles, resulting in a firefight in a tavern. Bridget (Diane Kruger), having survived the firefight, later picks up this gun and uses it to shoot Wilhelm.

Walther P38

SD Col. Hans Landa (Christoph Waltz), Gestapo Maj. Hellstrom (August Diehl) and several other German officers carry Walther P38 pistols. At the end, Landa hands his to Aldo Raine (Brad Pitt), who uses it to shoot Landa's driver.

Double Barreled Shotgun

Eric (Christian Berkel), the owner of the basement pub in which the shootout between the undercover bastards and the Nazi soldiers and officer occurs can be seen holding and later using an unknown double barrel shotgun.

Unknown sawed-off O/U shotgun

When the bastards break Hugo Stiglitz out of prison in the hopes of him joining their ranks, one of the bastards can be seen holding a shotgun sawed down to the length of large handgun/small carbine. This shotgun appeared so brief and no close ups, that only a promotional photo of Eli Roth holding it can confirm what it is.

OSS Pistol Glove

Donny (Eli Roth) and Omar (Omar Doom) each use a short-range OSS pistol glove when assassinating the German high command. In real life these weapons were loaded with a .38 round and as seen in the film were punched into their target.

Aldo Raine's Knife

Aldo Raine (Brad Pitt) carries a classic American Bowie knife throughout the film, notably using it to carve swastikas into the foreheads of Nazis.

Schutzstaffel Dagger

An SS dagger is seen being sharpened by Hugo Stiglitz (Til Schweiger) while the basterds wait for Bridget von Hammersmark's rendezvous, and at the end of the film Hans Landa hands his dagger over to Aldo Raine.
