Smith & Wesson Model 29
Seth Gecko's (George Clooney) revolver is a Smith & Wesson Model 29 with a 3 inch full lug barrel. It is later picked up and fired by both Scott (Ernest Liu) and Kate Fuller (Juliette Lewis).
Colt Mk IV Series 70
Although we could speculate about the manufacturer of the pistol carried by Richard Gecko (Quentin Tarantino), it is undoubtedly a M1911 pistol series Government model, with what looks like a stainless steel finish.
Codpiece Revolver
In defending himself against Razor Charlie (Danny Trejo) as the vampires begin their slaughter, Sex Machine (Tom Savini) uses the infamous Codpiece Revolver, as also seen in Desperado.
Unknown .357 Revolver
The liquor store clerk (Pete Bottoms) draws an unknown silver 4" revolver from his safe and shoots Richie (Quentin Tarantino) through the hand with it. By the looks of it it's probably a .357 Magnum in stainless steel, one of various possible makes and models.

At any rate, his specimen is evidently stainless-steel or nickel.
Shotguns
Jacob Fuller (Harvey Keitel) locates a pistol gripped 12 Gauge shotgun under the bar and uses it with a baseball bat to make a cross to both repel and shoot vampires. This is a Mossberg 500-series shotgun with a synthetic loop foregrip .
Additionally, the two shotguns weilded by Danny and Manny seem to be Mossbergs as well, or possibly the Remington 870 Shotgun.
It could be either of these
Colt Revolver
In the script says that the Texas Ranger Earl McGraw uses a colt he never have the chance to draw it
