The following guns were used in the film Red Scorpion
Gast gun
Not sure about the weapon used by Dolph Lundgren but its either a German twin barreled 'Gast gun' or a Lewis gun with the muzzle modded to imitate twin barrels. Can be seen if you click here.
This weapon could be the SAM Inc. made 'Crossfire' rifle, which is a hybrid mix of 7.62mm assualt rifle and 12 guage shotgun. The film-makers may have modified this gun with a Lewis gun's drum magazine.
AK 47
M134 minigun
An M134 minigun can be see in the nose of the Sikorsky S-62.
FN FAL
An FN FAL is seen with an M203 and is used by Dolph Lundgren.
