			:::::: The book makes it pretty clear why it's called The Chinaman. The character is a Vietnamese refugee, who opened a restaurant. His wife didn't believe Vietnamese food would sell as well as Chinese food, so she convinced him to open a Chinese restaurant instead of a Vietnamese one. And since basically everyone he encounters can't really tell one Asian ethnicity from another(or in some cases, don't even care, at one point someone points out to Brosnan's character that Quan is not actually a Chinaman, and is met with the reply "Who gives a fuck?"), and all they really know about him was that he owned a Chinese restaurant, they just assume he's Chinese.
